YIELDS: about 3 cups

1/2 cup dried hawthorn berries

1/4 cup dried rose hips

4 cups water

1 tablespoon raw honey

1 cup ice cubes

1 Add hawthorn berries, rose hips, and water to a medium, heavy-bottomed pot and bring to a boil. Reduce heat to a simmer and partially cover. Let simmer 20 minutes.

2 Strain the tea through a fine-mesh sieve into a heat-safe pitcher. Make sure to squeeze the spent berries and rose hips to extract as much water as possible before discarding. Stir in honey right away, while the tea is still warm.

3 Add ice. Serve chilled as an iced tea to support digestion during hot weather.
